1st Course:

Bluehill Bay Blondes (Bluehill Bay, Maine)

Species:
Crassostrea Virginica

Description:
They start life out in the nutrient rich waters of the "Salt Pond". A well known spawning ground for many marine species, and then are moved to pristine Blue Hill Bay to fill out their plump delicious sweet meats.

Flavor Profile:
Crisp, clean, buttery notes. Like a taste of the ocean.

2nd Course:

Disco Hama (Discovery Bay, Washington)

Species:
Crassostrea Gigas

Description:
Slowly but surely, we’re working our way out to sea. The Disco Hama is grown in Discovery Bay, just off the Strait of Juan de Fuca. All summer long the North wind blows down the strait, causing nearshore upwelling that brings cold, nutrient rich water to the surface. Disco Hamas are grown in bags on top of cobbled beaches, giving them a nice deep cup with a bit of frill, on a point on the western side of the bay. The farm site has swift currents, for ample food, and heavy southwest winds, for shell conditioning.

Flavor Profile:
These are salt-forward oysters, mellowing to a crisp sweetness with
a finish of fresh spinach, green olive, and light smoke.

3rd Course:

Tuxedo (Cascumpec Bay, PEI, Canada)

Species:
Crassostrea Virginica

Description:
Darker brown shells with alternating black and white stripes lend to the name Tuxedo. These tide-tumbled, northern PEI oysters are constantly jostled by the sea, which create beautiful, strong shells perfect for shucking.

Flavor Profile:
Delicate meats with good brine, slightly sweet notes, and a clean finish.

4th Course:

Aphrodite (Kilisut Harbor, WA)

Species:
Crassostrea Gigas

Description:
These oysters are slow growing and exposed to tides twice a day. They’re grown on gravel beaches at the mouth of a river where it flows into Hood Canal.

Flavor Profile:
Aphrodite oysters have a clean, crisp flavor with a hint of cucumber and melon rind.

On Mondays we Shuck

The first Monday of every month our team will curate a special menu for our Shuck Clubbers. Served family style, we will shuck and present some special varieties of oysters and accoutrements that are only available during these events. It's a great time to gather, drink and shuck around with your favorite raw bar. Our team will be pouring a wide range of cocktails, champagnes, sparkling wines, wine and shooters! Plus we end with a mouth-watering exclusive tasting menu. Seating is extremely limited at these events as we want to focus on hospitality and experience. Like you're coming to our personal bar and lounge.
