Oysters vary by coast due to water conditions. East Coast oysters, like Blue Point, are meatier and saltier with a sharp, briny flavor. West Coast oysters, such as Kumamoto, are smaller, sweeter, and milder with a melon-like taste. Gulf Coast oysters are larger, with a buttery, less briny flavor, thanks to warmer, mineral-rich waters. Each region offers a unique taste and texture experience!
